What it tastes like
The citrus acidity leads, fruit notes come forward and there is pineapple and passion fruit in it.
The technique
Shaking. Anything with juice, syrup, egg white or cream gets shaken: the shaker chills the drink and adds roughly 20% water, and that water is what takes the edge off. Twelve to fifteen seconds, until the tin frosts over. Under-shaking leaves the drink harsh because it never got enough dilution.
Glass and ice
A stemmed, shallow coupe. The stem keeps your hand's warmth away from the drink, and the wide bowl carries the aroma to your nose. Served without ice.
Ingredient notes and substitutes
Scotch whisky
Scotch. Blends are soft and grainy, single malts have more character. Unless the recipe says Islay, picking a smoky bottle will throw the drink out of balance.
Fresh lime juice
Freshly squeezed lime. Bottled lime tastes cooked and flat; one lime gives about 30 ml. If you have none, half lemon and half grapefruit juice comes closest.
Passion fruit syrup
Passion fruit syrup. The seedy pulp is balanced with sugar; it is high in acid, so recipes that use it usually pull back on the lemon.
Ginger syrup
Ginger syrup — grated fresh ginger steeped with equal parts sugar and water, then strained. In a pinch use ginger beer, but then cut the sugar elsewhere in the recipe.
The Story
A modern sour that carries Scotch into tiki territory; whisky with ginger is an old pairing, passion fruit the newer twist.
