Ingredients
Fresh lemon juice30 ml (1 oz)
Passion fruit syrup22 ml (0.7 oz)
Grenadine7.5 ml (0.3 oz)
Soda water90 ml (3 oz)

How to Make It
Add the lemon juice, passion fruit syrup, grenadine and bitters to a shaker with ice.
Shake briefly until cold.
Strain into a hurricane glass filled with ice and top with the soda water.
Garnish with a maraschino cherry or a lemon wheel.

What it tastes like
The citrus acidity leads, fruit notes come forward and there is pineapple and passion fruit in it.
The technique
Shaking. Anything with juice, syrup, egg white or cream gets shaken: the shaker chills the drink and adds roughly 20% water, and that water is what takes the edge off. Twelve to fifteen seconds, until the tin frosts over. Under-shaking leaves the drink harsh because it never got enough dilution.
Glass and ice
The curved, tall hurricane glass. Tiki and tropical drinks often run past 200 ml, and this is the shape that holds that volume along with the ice.
Ingredient notes and substitutes
Fresh lemon juice
Freshly squeezed lemon; one lemon gives 30-40 ml. It can swap with lime, but lemon is softer and less aromatic, so use a touch more.
Passion fruit syrup
Passion fruit syrup. The seedy pulp is balanced with sugar; it is high in acid, so recipes that use it usually pull back on the lemon.
Grenadine
Pomegranate syrup. Most supermarket bottles are dyed corn syrup with no pomegranate in them; reducing pomegranate juice with an equal weight of sugar takes ten minutes and changes the drink completely.
Soda water
Plain carbonated water. It goes in LAST and nothing is stirred after it. An open bottle goes flat fast, so small bottles make more sense than big ones.
Angostura bitters
The salt of the cocktail world. Measured in dashes, not millilitres: a few of them cut the sweetness and add spice. One bottle lasts years.
