Ric Pear Blanc Recipe

Ric Pear Blanc

A vermouth-based sour: sweet white vermouth with lime, a splash of pear brandy and ginger syrup, softened by a light egg-white foam.

Ingredients

How to Make It

  1. Add all ingredients to a shaker and shake without ice to build the foam.
  2. Add ice and shake again until very cold.
  3. Double-strain into a chilled coupe.
  4. Garnish with a fresh rosemary sprig.

Garnish

Fresh rosemary sprig

What it tastes like

The citrus acidity leads, fruit notes come forward, it wears a foam cap and it is low in alcohol.

The technique

Shaking. Anything with juice, syrup, egg white or cream gets shaken: the shaker chills the drink and adds roughly 20% water, and that water is what takes the edge off. Twelve to fifteen seconds, until the tin frosts over. Under-shaking leaves the drink harsh because it never got enough dilution.

Glass and ice

A stemmed, shallow coupe. The stem keeps your hand's warmth away from the drink, and the wide bowl carries the aroma to your nose. Served without ice.

Ingredient notes and substitutes

Vermouth bianco
White but sweet vermouth — not to be confused with the dry one. It carries vanilla and chamomile, and can replace sweet red vermouth, though the drink stays pale.
Fresh lime juice
Freshly squeezed lime. Bottled lime tastes cooked and flat; one lime gives about 30 ml. If you have none, half lemon and half grapefruit juice comes closest.
Ginger syrup
Ginger syrup — grated fresh ginger steeped with equal parts sugar and water, then strained. In a pinch use ginger beer, but then cut the sugar elsewhere in the recipe.
Egg white
Egg white adds texture, not flavour. Shake it first without ice (a dry shake), then again with ice. The vegan swap is chickpea water, in the same quantity.

The Story

A contemporary low-proof sour that puts vermouth bianco in the base-spirit seat, with Poire Williams as the accent.

Frequently asked questions

How is a Ric Pear Blanc mixed?
It is shaken and served in a coupe.
How strong is a Ric Pear Blanc?
Roughly 11% ABV as served — right around a glass of wine — an aperitif or an early-evening drink.
Can a Ric Pear Blanc be made without alcohol?
Simply leaving the spirit out does not work — the body and the bitterness go with it. The 86 alcohol-free recipes in the catalogue are built to hit that balance from the start.
Is a Ric Pear Blanc hard to make?
Moderate. A shaker or mixing glass plus a strainer covers it.
