Passion Fruit Fizz Mocktail Recipe

Passion Fruit Fizz

Passion fruit and lime topped with soda — sharp, aromatic and impossible to drink slowly.

Ingredients

How to Make It

  1. Fill a highball glass with ice.
  2. Add the passion fruit juice, lime juice and syrup.
  3. Top with soda water and stir gently.
  4. Float half a passion fruit on top.

Garnish

Half a passion fruit

What it tastes like

The sweetness is pronounced, fruit notes come forward, there is pineapple and passion fruit in it and it is carbonated.

The technique

Layering. The liqueurs sit on each other by sugar density — the sweetest one goes in first, at the bottom. Each layer is poured slowly over the BACK of a bar spoon so it spreads instead of punching through. Rush it and the layers fold together, and there is no fixing that.

Glass and ice

A tall, narrow highball. The narrowness does real work — less surface area means the carbonation lasts longer and the ice melts more slowly.

Ingredient notes and substitutes

Fresh lime juice
Freshly squeezed lime. Bottled lime tastes cooked and flat; one lime gives about 30 ml. If you have none, half lemon and half grapefruit juice comes closest.
Simple syrup
One part sugar to one part water, stirred until it dissolves — no need to boil it. Keeps a month in the fridge. No syrup? Use the same amount of honey, loosened with a little water.
Soda water
Plain carbonated water. It goes in LAST and nothing is stirred after it. An open bottle goes flat fast, so small bottles make more sense than big ones.

The Story

Brazil drinks more passion fruit juice than anywhere else; the fizzy version is standard at every corner lanchonete.
