How to Make It

  1. Simmer the water, syrup, ginger juice and spices for ten minutes with a strip of orange peel.
  2. Take the pan off the heat and stir in the cachaça.
  3. Strain into warm mugs.
  4. Garnish with a fresh strip of orange peel.

The technique

Built in the glass. Ice goes into the serving glass, the ingredients go on top, and you stir once if at all. Anything carbonated goes in LAST and never gets stirred; every turn of the spoon costs you bubbles. Fill the glass to the rim with ice: less ice melts faster, not slower.
