Fig & Sumac Fizz Mocktail Recipe

Fig & Sumac Fizz

Fig syrup with a rim of sumac — jammy sweetness cut by a sour spice most people only know from salad.

Ingredients

How to Make It

  1. Rim a highball glass with sumac.
  2. Fill with ice and add the fig syrup, lemon juice and cold water.
  3. Top with sparkling water and stir gently.
  4. Garnish with a fig slice.

Garnish

Sumac rim and a fig slice

What it tastes like

The citrus acidity leads, the sweetness is pronounced, it is carbonated and it is layered, giving you something different each sip.

The technique

Built in the glass. Ice goes into the serving glass, the ingredients go on top, and you stir once if at all. Anything carbonated goes in LAST and never gets stirred; every turn of the spoon costs you bubbles. Fill the glass to the rim with ice: less ice melts faster, not slower.

Glass and ice

A tall, narrow highball. The narrowness does real work — less surface area means the carbonation lasts longer and the ice melts more slowly.

Ingredient notes and substitutes

Fresh lemon juice
Freshly squeezed lemon; one lemon gives 30-40 ml. It can swap with lime, but lemon is softer and less aromatic, so use a touch more.
Cold water
Seeing it in a recipe is not a mistake: in spirit-forward drinks, measuring the dilution instead of leaving it to the ice is what makes the result repeatable.
Sparkling water
Mineral water or plain soda both work; the minerals in mineral water leave a faint salty depth. The fizz lasts longest in a small, unopened bottle.

The Story

Sumac is the Levantine souring agent, used where a Western kitchen would reach for lemon; against fig it does something neither does alone.
