Ingredients
- Mezcal60 ml (2 oz)
- Fresh lime juice22 ml (0.7 oz)
- Grenadine30 ml (1 oz)
- Ginger beer150 ml (5.1 oz)
How to Make It
- Fill a copper mug with ice cubes.
- Pour in the mezcal, lime juice and grenadine.
- Top with ginger beer.
- Stir gently once to combine.

Built in the glass. Ice goes into the serving glass, the ingredients go on top, and you stir once if at all. Anything carbonated goes in LAST and never gets stirred; every turn of the spoon costs you bubbles. Fill the glass to the rim with ice: less ice melts faster, not slower.

Ingredient notes and substitutes
- Mezcal
- The Mexican spirit whose smoke comes from roasting the agave in a stone pit. It can stand in for tequila, but the smoke walks over everything else; starting half and half is the balanced move.
- Fresh lime juice
- Freshly squeezed lime. Bottled lime tastes cooked and flat; one lime gives about 30 ml. If you have none, half lemon and half grapefruit juice comes closest.
- Grenadine
- Pomegranate syrup. Most supermarket bottles are dyed corn syrup with no pomegranate in them; reducing pomegranate juice with an equal weight of sugar takes ten minutes and changes the drink completely.
- Ginger beer
- Ginger beer is non-alcoholic despite the name, which comes from an old fermentation tradition. It is far sharper than ginger ale, and ale does not replace it in a mule.
