Amaro Highball Recipe
A long, low-proof drink led by a light, orange-scented amaro (Montenegro is the usual choice), with a little mezcal for smoke and Cynar for depth.

Ingredients
- Amaro45 ml (1.5 oz)
- Mezcal15 ml (0.5 oz)
- Cynar (artichoke amaro)7.5 ml (0.3 oz)
- Fresh lemon juice30 ml (1 oz)
- Agave syrup15 ml (0.5 oz)
- Soda water60 ml (2 oz)
How to Make It
- Add everything except the soda water to a shaker with ice.
- Shake briefly, just until cold.
- Strain into a highball glass filled with ice and top with the soda water.
- Garnish with an olive and a dehydrated lemon wheel.
