Ingredients
Aged rum60 ml (2 oz)
Fresh lime juice20 ml (0.7 oz)
Honey15 ml (0.5 oz)
Cold water10 ml (0.3 oz)
How to Make It
Dissolve the honey in the water and lime juice in the glass.
Add the rum and stir.
Fill with crushed ice and stir again until chilled.
Garnish with a lime wheel.

What it tastes like
The sweetness is pronounced, it smells of lemon and lime peel and it drinks cool and easy.
The technique
Muddling. Fruit, herbs or sugar get pressed at the bottom of the glass. With leaves like mint the goal is to press, not to shred: two or three pushes is plenty, more releases chlorophyll and turns the drink grassy and bitter. Sugar and firm fruit, on the other hand, really do get crushed.
Glass and ice
A heavy-bottomed, wide old fashioned glass. Wide enough for one large cube, which is the point: a big cube has less surface area, so the drink gets cold without getting watery.
Ingredient notes and substitutes
Aged rum
Aged rum. The barrel gives it a tannin and oak character close to whiskey's; it is smooth enough to drink neat, which is why the drinks built on it keep the ingredient list short.
Fresh lime juice
Freshly squeezed lime. Bottled lime tastes cooked and flat; one lime gives about 30 ml. If you have none, half lemon and half grapefruit juice comes closest.
Honey
Honey will not disperse in a cold liquid; turn it into a syrup first, three parts honey to one part hot water. Dark honeys bury the spirit's aroma — a pale one is safer.
Cold water
Seeing it in a recipe is not a mistake: in spirit-forward drinks, measuring the dilution instead of leaving it to the ice is what makes the result repeatable.
