Blackberry Rosemary Sparkler Mocktail Recipe

Blackberry Rosemary Sparkler

Crushed blackberries and rosemary under sparkling water — dark, piney and dressed up enough for a table setting.

Ingredients

How to Make It

  1. Muddle the blackberries with lemon juice and syrup in a shaker.
  2. Slap the rosemary sprig and add it with ice, then shake.
  3. Double-strain into a wine glass over fresh ice.
  4. Top with sparkling water and garnish.

Garnish

Blackberries and a rosemary sprig

What it tastes like

Fruit notes come forward, it has a green, botanical backdrop and it is carbonated.

The technique

Shaking. Anything with juice, syrup, egg white or cream gets shaken: the shaker chills the drink and adds roughly 20% water, and that water is what takes the edge off. Twelve to fifteen seconds, until the tin frosts over. Under-shaking leaves the drink harsh because it never got enough dilution.

Glass and ice

A stemmed wine glass. The big bowl leaves room for ice and fruit, and gives the aroma somewhere to gather.

Ingredient notes and substitutes

Fresh lemon juice
Freshly squeezed lemon; one lemon gives 30-40 ml. It can swap with lime, but lemon is softer and less aromatic, so use a touch more.
Simple syrup
One part sugar to one part water, stirred until it dissolves — no need to boil it. Keeps a month in the fridge. No syrup? Use the same amount of honey, loosened with a little water.
Sparkling water
Mineral water or plain soda both work; the minerals in mineral water leave a faint salty depth. The fizz lasts longest in a small, unopened bottle.

The Story

Built for the no-alcohol aperitivo hour, which Italian bars adopted faster than anyone expected once the category existed.
