Cranberry Rosemary Spritz

Cranberry and rosemary over ice with sparkling water — tart enough to serve before a meal rather than after.

How to Make It

  1. Slap the rosemary sprig and drop it into a wine glass.
  2. Fill with ice and add the cranberry juice, lemon juice and syrup.
  3. Top with sparkling water and stir gently.
  4. Garnish with rosemary and a few cranberries.

What it tastes like

The citrus acidity leads, fruit notes come forward, it has a green, botanical backdrop and it is carbonated.

The technique

Built in the glass. Ice goes into the serving glass, the ingredients go on top, and you stir once if at all. Anything carbonated goes in LAST and never gets stirred; every turn of the spoon costs you bubbles. Fill the glass to the rim with ice: less ice melts faster, not slower.

Ingredient notes and substitutes

Fresh lemon juice
Freshly squeezed lemon; one lemon gives 30-40 ml. It can swap with lime, but lemon is softer and less aromatic, so use a touch more.
Simple syrup
One part sugar to one part water, stirred until it dissolves — no need to boil it. Keeps a month in the fridge. No syrup? Use the same amount of honey, loosened with a little water.
Sparkling water
Mineral water or plain soda both work; the minerals in mineral water leave a faint salty depth. The fizz lasts longest in a small, unopened bottle.
