  2. Pour into a flute with the lemon juice and syrup.
  3. Top slowly with sparkling water.
  4. Float a star anise on top.

Star anise

What it tastes like

Fruit notes come forward and it is carbonated.

The technique

Layering. The liqueurs sit on each other by sugar density — the sweetest one goes in first, at the bottom. Each layer is poured slowly over the BACK of a bar spoon so it spreads instead of punching through. Rush it and the layers fold together, and there is no fixing that.

Glass and ice

A narrow, tall flute. The slim opening is what keeps sparkling wine fizzing longest: there is very little surface for the bubbles to escape from.

Ingredient notes and substitutes

Fresh lemon juice
Freshly squeezed lemon; one lemon gives 30-40 ml. It can swap with lime, but lemon is softer and less aromatic, so use a touch more.
Simple syrup
One part sugar to one part water, stirred until it dissolves — no need to boil it. Keeps a month in the fridge. No syrup? Use the same amount of honey, loosened with a little water.
Sparkling water
Mineral water or plain soda both work; the minerals in mineral water leave a faint salty depth. The fizz lasts longest in a small, unopened bottle.

The Story

Pear and anise is a pairing French kitchens have used in poaching syrups for generations; the cold version is newer and simpler.
