Wiz Fizz Recipe
A Ramos-style cream fizz with a bitter streak: gin and Cynar shaken with lemon, egg white and cream, then lifted with root beer instead of soda.

Ingredients
- Gin45 ml (1.5 oz)
- Cynar (artichoke amaro)15 ml (0.5 oz)
- Fresh lemon juice22.5 ml (0.8 oz)
- Simple syrup22.5 ml (0.8 oz)
- Egg white1 piece
- Fresh cream30 ml (1 oz)
- Root beer30 ml (1 oz)
How to Make It
- Shake everything except the root beer without ice to build the foam.
- Add ice and shake again, long and hard.
- Pour the root beer into a chilled highball glass without ice.
- Strain the drink slowly on top so the foam rises above the rim.
- Grate nutmeg over the foam and serve with a straw.
