Martinique's everyday short drink: grassy rhum agricole, cane syrup and a squeezed disc of lime.

How to Make It

  1. Pour the cane syrup into an old fashioned glass.
  2. Cut a thin disc of lime with a little peel attached, squeeze it over the glass and drop it in.
  3. Add the rhum agricole and stir briefly with a bar spoon.
  4. Serve neat, or with a single small ice cube if you prefer.

The squeezed lime disc, dropped back into the glass.

What it tastes like

It smells of lemon and lime peel, the spirit is right out front and it hits hard.

The technique

Built in the glass. Ice goes into the serving glass, the ingredients go on top, and you stir once if at all. Anything carbonated goes in LAST and never gets stirred; every turn of the spoon costs you bubbles. Fill the glass to the rim with ice: less ice melts faster, not slower.

A heavy-bottomed, wide old fashioned glass. Wide enough for one large cube, which is the point: a big cube has less surface area, so the drink gets cold without getting watery.

Ingredient notes and substitutes

White rhum agricole
Rum distilled from FRESH cane juice rather than molasses; it carries a grassy, vegetal edge. Made with molasses rum the drink turns rounder and sweeter, and that grassiness is gone.
Cane sugar syrup
A syrup from cane sugar, darker and faintly molasses-like next to a plain white-sugar syrup. Simple syrup stands in, but that depth is lost.
Lime disc with peel
A disc of lime cut with its peel on; its job is the oil in the skin, not the juice, so it is pressed rather than squeezed.
