Jägerita

A Margarita with Jägermeister in place of tequila; lime and orange liqueur turn the herbal liqueur surprisingly bright, spiced and tart.

How to Make It

  1. Add all ingredients to a shaker with ice.
  2. Shake hard until well chilled.
  3. Strain into a chilled cocktail glass.
  4. Garnish with a pineapple wedge on the rim.

What it tastes like

The citrus acidity leads, it smells of lemon and lime peel and it has a green, botanical backdrop.

The technique

Shaking. Anything with juice, syrup, egg white or cream gets shaken: the shaker chills the drink and adds roughly 20% water, and that water is what takes the edge off. Twelve to fifteen seconds, until the tin frosts over. Under-shaking leaves the drink harsh because it never got enough dilution.

The conical martini glass. Made for drinks served without ice — the stem keeps your hand off the bowl and the cone funnels the aroma upward.

Ingredient notes and substitutes

Cointreau
The French orange liqueur, 40% alcohol. It is the dry, strong end of triple sec; swap in a cheap triple sec and the drink gets sweeter and loses its backbone.
Fresh lime juice
Freshly squeezed lime. Bottled lime tastes cooked and flat; one lime gives about 30 ml. If you have none, half lemon and half grapefruit juice comes closest.
Simple syrup
One part sugar to one part water, stirred until it dissolves — no need to boil it. Keeps a month in the fridge. No syrup? Use the same amount of honey, loosened with a little water.
