The Aperol Spritz's more serious sibling: Campari, prosecco and soda — vivid red, properly bitter and only faintly sweet.

Ingredients
- Campari60 ml (2 oz)
- Prosecco90 ml (3 oz)
- Soda water30 ml (1 oz)
How to Make It
- Fill a large wine glass with ice.
- Pour in the prosecco, then the Campari.
- Add the soda water and stir once, gently.
- Garnish with an orange wheel.

The Story
The spritz grew out of the northern Italian habit of lengthening wine with sparkling water; using Campari as the bitter gives the driest, most bitter version.
