Gin and apple brandy stirred with sweet vermouth and a touch of yellow Chartreuse — apple, juniper and honeyed herbs.

How to Make It

  1. Add all ingredients to a mixing glass with ice.
  2. Stir until well chilled and diluted.
  3. Strain into a chilled Nick & Nora or small coupe.
  4. Express a lemon twist over the drink and drop it in.

It has a green, botanical backdrop, the spirit is right out front and it hits hard.

The technique

Stirring. All-spirit drinks are stirred — shaking whips air into them and ruins both the clarity and the texture. Thirty to forty seconds in a mixing glass, the spoon tracing the wall. You are after the same ~20% dilution, just slower and under control.

Glass and ice

A stemmed, shallow coupe. The stem keeps your hand's warmth away from the drink, and the wide bowl carries the aroma to your nose. Served without ice.

Ingredient notes and substitutes

Gin
London dry gin: juniper up front, citrus and coriander behind it. Brand really does show here — Beefeater is sharp, Hendrick's floral, Tanqueray juniper-heavy.
Calvados
Normandy's apple brandy. It is distilled from cider, not from juice, so it is dry and earthy rather than sweet — dry cider is not a substitute for it.
Sweet red vermouth
Once opened it lives IN THE FRIDGE and should be finished within a month; a bottle left at room temperature oxidises in a few weeks and sours the drink.
Yellow Chartreuse
The sweeter, honeyed, 40% version of the green. It can stand in for green Chartreuse, but the drink softens noticeably and loses its herbal bite.

The Warday's Cocktail is listed in Harry Craddock's Savoy Cocktail Book, published in London in 1930, as gin, Italian vermouth, calvados and Chartreuse.
