The Penicillin moved south: tequila with lime, honey and ginger, finished with a smoky float of mezcal where the original uses Islay Scotch.

Ingredients
- Blanco tequila60 ml (2 oz)
- Fresh lime juice22.5 ml (0.8 oz)
- Honey syrup10 ml (0.3 oz)
- Ginger syrup10 ml (0.3 oz)
- Mezcal1 tsp
How to Make It
- Add the tequila, lime juice, honey syrup and ginger syrup to a shaker with ice.
- Shake hard until well chilled.
- Strain into a rocks glass over one large ice cube.
- Float the mezcal on top and garnish with skewered candied ginger.
