Disgruntled Mai Tai Recipe
A Mai Tai gone bitter: overproof rum shares the glass with Aperol, and a whole miniature of Underberg adds a dark herbal edge to the lime and orgeat.

Ingredients
- Overproof rum30 ml (1 oz)
- Aperol30 ml (1 oz)
- Fresh lime juice30 ml (1 oz)
- Orgeat syrup15 ml (0.5 oz)
- Orange curaçao15 ml (0.5 oz)
- Underberg (German herbal bitters)20 ml (0.7 oz)
How to Make It
- Add all ingredients, including the whole 20 ml bottle of Underberg, to a shaker with ice.
- Shake briefly.
- Strain into a tall glass filled with crushed ice.
- Garnish with a mint sprig, a lime wedge, grated nutmeg and a cocktail umbrella.
