How to Make It
Add mint and elderflower to a wine glass with ice.
Add prosecco and soda.
Stir gently.
Garnish with mint and lime.

It carries a floral top note, it is carbonated, it drinks cool and easy and it is low in alcohol.
The technique
Built in the glass. Ice goes into the serving glass, the ingredients go on top, and you stir once if at all. Anything carbonated goes in LAST and never gets stirred; every turn of the spoon costs you bubbles. Fill the glass to the rim with ice: less ice melts faster, not slower.

Ingredient notes and substitutes
Elderflower liqueur
Elderflower liqueur, such as St-Germain. Floral and sweet; too much of it reads as perfume, which is why recipes rarely go past 15-20 ml.
Prosecco
Italian sparkling wine, fruitier and less yeasty than champagne. It is what a spritz means by sparkling wine, and it has to be opened ice-cold.
Soda water
Plain carbonated water. It goes in LAST and nothing is stirred after it. An open bottle goes flat fast, so small bottles make more sense than big ones.
Fresh mint leaves
The stem is bitter, so use the leaves. One clap between your palms before it goes in releases the oils and gives you the aroma without bruising it.
