Ginger Turmeric Tonic

Fresh ginger and turmeric with lemon and honey — golden, sharp and warming even served cold.

How to Make It

  1. Shake the ginger juice, lemon juice, honey syrup and turmeric with ice.
  2. Strain into a highball glass over fresh ice.
  3. Top with sparkling water.
  4. Garnish with a lemon wheel.

What it tastes like

It smells of lemon and lime peel, there is a spiced warmth to it and it drinks cool and easy.

The technique

Shaking. Anything with juice, syrup, egg white or cream gets shaken: the shaker chills the drink and adds roughly 20% water, and that water is what takes the edge off. Twelve to fifteen seconds, until the tin frosts over. Under-shaking leaves the drink harsh because it never got enough dilution.

Glass and ice

A tall, narrow highball. The narrowness does real work — less surface area means the carbonation lasts longer and the ice melts more slowly.

Ingredient notes and substitutes

Fresh lemon juice
Freshly squeezed lemon; one lemon gives 30-40 ml. It can swap with lime, but lemon is softer and less aromatic, so use a touch more.
Honey syrup
Three parts honey to one part warm water. Neat honey seizes up in a cold drink, which is why it gets loosened first. Heavier and more aromatic than simple syrup.
Sparkling water
Mineral water or plain soda both work; the minerals in mineral water leave a faint salty depth. The fizz lasts longest in a small, unopened bottle.
