Gin and Aperol stirred over muddled cucumber: a dry, pale-orange aperitif where cool cucumber takes the place vermouth would hold in a Negroni-style drink.

How to Make It

  1. Gently muddle the cucumber slices in a mixing glass.
  2. Add the gin, Aperol and ice, and stir until well chilled.
  3. Fine-strain into a chilled small wine glass.
  4. Express a lemon peel over the drink and discard or drop it in.
