  1. Blend coconut cream and pineapple juice with a cup of ice.
  2. Blend until smooth.
  3. Pour into a hurricane glass.
  4. Garnish with pineapple and a cherry.

What it tastes like

The sweetness is pronounced, there is pineapple and passion fruit in it and the texture is creamy.

The technique

Blended. Everything goes into the blender with crushed ice. Cubes strain the motor and leave shards behind; crushed or pellet ice gives a smoother drink. Rule of thumb: about a cup of crushed ice per serving. More ice than that and you are drinking a slush with no flavour left.

The curved, tall hurricane glass. Tiki and tropical drinks often run past 200 ml, and this is the shape that holds that volume along with the ice.
