Savoury Tomato Cooler Mocktail Recipe

Savoury Tomato Cooler

Tomato juice with lemon, pepper and a celery stick — a Bloody Mary that never needed the vodka.

Ingredients

How to Make It

  1. Fill a highball glass with ice.
  2. Add the tomato juice, lemon juice, Worcestershire sauce and salt.
  3. Roll the drink between two glasses rather than shaking it.
  4. Garnish with a celery stick and grind black pepper over the top.

Garnish

Celery stick and black pepper

What it tastes like

There is a spiced warmth to it.

The technique

Built in the glass. Ice goes into the serving glass, the ingredients go on top, and you stir once if at all. Anything carbonated goes in LAST and never gets stirred; every turn of the spoon costs you bubbles. Fill the glass to the rim with ice: less ice melts faster, not slower.

Glass and ice

A tall, narrow highball. The narrowness does real work — less surface area means the carbonation lasts longer and the ice melts more slowly.

Ingredient notes and substitutes

Fresh lemon juice
Freshly squeezed lemon; one lemon gives 30-40 ml. It can swap with lime, but lemon is softer and less aromatic, so use a touch more.
Salt
A pinch of salt lifts the sweetness and pulls the bitterness back — most of all in grapefruit and tomato drinks. Coarse salt for the rim; dissolved brine when it goes into the drink.

The Story

Poland drinks more tomato juice per head than almost anywhere, usually salted and peppered and taken as a meal in itself.
